I found a brisket buried in the freezer from 4/2010. Do I dare cook / smoke it?  Will it kill us?

See what it looks like thawed.
If it does not look or smell like skunk ass I say eat it.

No. 24 hours of good hickory smoke will render it safe.

Trim the fat and freezer burn off and make jerky out of it.

I assume it is a vacpac? If so then you are good to go. If not then I'd probably toss it.

Make gumbo. That is what gumbo was invented for. If it has the freezer burnz, trash it.

If you got dags, cut off a chunk as it thaws and put it in their bowl.  If they won't touch it, there is a good reason.

At the worst it's freeze burned. As long as it has remained frozen, it won't kill you.

I remember reading stories about people eating Mammoth that had been frozen in Siberia for 10,000 years. I don't know if any of those people died though.

Thaw it, trim  fat and any freezer burn, take a good whiff. If it smells like meat throw some smoke at it! or maybe a big batch of chilli, or some homemade beef barley soup, or some .... oh never mind, just send it to me and I will dispose of it safely for you!

Trim a little fat off and the freezer burnt areas on other three sides.  Put in smoker until 205.  Eat.

It's fine. I am on 2010 venison still. Ate some last night in a burrito.
