Also, for beginners, try watching spanish cartoon shows on saturday morning.  Once those become boring (shouldn't take long) you can move up to adult programming.

News in slow spanish is good for this.

Perfect. Came here to post that. The boss guy teaching you will really mangle most important words, but your work mates will keep you straight on what words to call the boss.

The only phrase I found useful traveling in Mexico was, donde esta la casa de las puntas?

These are my tips:

Purchase a very good dictionary or find one online that has been vetted by native speakers.

Watch some romantic comedies/dramas (they seem to be the best for real world usage) in Spanish with the subtitles.  When you see a phrase that would be useful, hit pause write is down and practice it.

Don't get super anal about conjugation right now.  Many people disagree with me here, but a large vocabulary is much more important IMO.  It doesn't matter how well you can conjugate if you don't even know the word you need to use.

Find a couple of native speakers who you can talk to and who will also correct you when you are wrong.

Take notes on everything and study/practice.

This is relavent to my interests.

I know some spanish
I stayed out of trouble in mexico for two weeks

I want to get to a conversational level in a short amount of time.

I have about 8 months left at this job (nothing secured past then)
knowing spanish will give me another variable and help in other matters as well.

Rosetta Stone? or another software?  On-line?

I know I'd like to do total immersion, but I don't like going to the crappy parts of town

Serious recommendation - buy Harry Potter book or another similar book in Spanish. Look up the words you can't work out. Finish it, graduate and read something more difficult.
