not lamb. this is a roast looking thing someone gave us when we delivered their turkey ,

I'm guessing 2 - 3 lbs doesn't feel like it's got a bone in there so I'm guess it's a hunk of sheep's ass.

maybe run it through the grinder and use to make shepherd's pie?
cut it into chunks and make stew?
chilli?

I would turn it into some kind of stew. Hard to go wrong with meat simmered until tender.

Rotisserie, heavy rosemary and thyme, salt, pepper rub. Cut in several garlic cloves right in to the meat. More well done than lamb for this, at least 160 degrees to get more fat rendered out.  Serve with Cross and Blackwell mint sauce. Roasted taters go with it pretty well too.  
Mutton doesn't want to render in it's own juices, if you oven roast it put it on a rack. Kabobs are another option.
