a leatherman. Seriously, compact, easy to carry with a bone saw included plus whatever else you might need. The pliers come in handy just in case of accidental cactus encounters too.

I haven't hunted deer since I was a kid.

I really think the multi tool idea mentioned above is a good idea.  

I would use some brake parts cleaner on the tool afterwards.

I have a pos gerber metalious  I have been using for about 5 years. It holds an edge decent, has a rubber grips, and a good skinning contour. I think it cost me $35, so I don't care what happens to it.

Two actually.
My 1985 purchased Buck 110 folder for gutting and quartering.
My old American made Schrade  fixed blade Sharp Finger for skinning.

If I had to choose just one it would be the Buck 110 folder.

I have an old Gerber bolt action I think is what it is called. I prefer a folder over a fixed bladed knife.

There are many good choices. Some of my favorites are the Schrade Sharpfinger, Gerber Gator with the clip point, and the Green River Hunter.

I've got a gerber something or another.  Fixed blade, rubber handle, not too many nooks and crannies to hold guts n blood.

Stays sharp as a mofo.

I've never liked gutting deer with a folder, pain in the ass to get all the little chunks out of if when you get home.

I lost one of those in my army days years age, brought back memories.

Mine came with a spare saw blade that rode in a second pocket in the sheath, I still have the sheath and second blade, but no knife

We hunt on the lakes, I'll usually just stick it in the water once we're going about 35, power wash

Huh! Just ordered this 2 days ago... I'm keeping my thumb tips attached though!

ETA: Been debating on whether to get a separate fillet style to go along with it - anybody else use two knife types while field dressing?

Cold Steele Pendleton Lite.  Great handing little knife.  Easy to sharpen and holds an edge.  Low cost makes them great gifts.
