Getting back onto a somewhat healthy diet for work.  Grabbed a Costco bag of chicken breasts, what should I season them with to keep me from getting bored?  Grilling them.

I saw breast and clicked in.

Coat with olive oil. Minced garlic, salt, and pepper (lemon pepper or parsley from time to time). 350 for 5 min each side for pieces under 1" thick (12-14 min min total for 1"-1.5 thick).

Italian salad dressing.  I use Kraft but any will suffice.  I simply marinade them in a bag with some dressing in the morning and grill them when i get home at the end of the day.

Marinate them in light italian dressing, or goya Mojito, you can also ass a couple of squirts of balsamic to the dressing marinade to give it a little different flavor.

make your own seasoning

1 tbsp of each mixed in a tiny dish

salt
pepper
onion powder
garlic powder
paprika

sprinkle onto chicken

sear in a skillet with a tiny bit of oil

cover and let cook through

enjoy

or

Sizzling chicken and cheese

4 chicken breasts
1/2 onion chopped
1/2 green pepper chopped
1-2 chopped jalepenos-optional if you do or dont like spicyness
1 cup shredded colby jack cheese, or whatever you like
garlic salt with parsley
seasoned salt
2 tbsp butter

have ingredients ready
fire up the grill
make a shallow pan/boat out of tin foil, about 6"x8"x1"
Place peppers onions jalepenos butter and a bit of seasoning in the foil pan and place on grill to get veggies cooking
Season the chicken breasts, and place on the grill (slide the foil pan to the side)
When the breasts are nearly finished place them in the foil pan with the veggies
spoon the veggies on top of the breasts as you add them
when breasts are covered with veggies cover, with shredded cheese and close the lid on your grill till it melts

Very easy, very good, enjoy

Try some fajita seasoning.       The Addams brand goes good on just about anything ( never tried on seafood)
eta; try using boneless thighs instead of breasts.   The flavor is MUCH better and they dont dry out as much

For a typical all purpose chicken seasoning I like the following:
This is similar to store bought poultry seasoning but I like making it myself.

3 tablespoons dried crumbled sage
1 tablespoon dried crumbled thyme
1 tablespoon dried crumbled marjoram
1 tablespoon dried rosemary
1 tablespoon ground black pepper
1 teaspoon celery seeds
1/4 teaspoon cloves, powdered

chicken needs to be brined.
Soak in brine of your choice at least 4 hours before cooking, longer if possible.  Season with any of the above, but brining will keep it moist and add flavor

Buy bone in, skin on.  You wont need any marinade.

Olive oil, salt, fresh cracked pepper.

On the rare occasion I do marinate, its the above plus fresh squeezed lemon juice, a crushed clove of garlic or 2, and some fresh rosemary from the garden

This is my favorite dry rub and I haven't found anything that it isn't good on.

4 teaspoons salt
4 teaspoons fine ground coffee
4 teaspoons chili powder
2 tablespoons dark brown sugar
1/2 teaspoon freshly ground pepper
1/2 teaspoons onion powder
1/2 teaspoon garlic powder
1/4-1/2 teaspoon cayenne
1/4 teaspoon ground coriander
1/4 teaspoon turmeric

Make my own for when I cook shashlik.

Olive oil, wortcheshire (sp), balsamic, salt, pepper, dried dill, Asian seeds, iItalian herbs, crushed mustard seed, and a dash of wine. Marinate for a few hours.

Jamaican Jerk Marinade

1 T Allspice
1 T Thyme
1 1/2 tsp Cayenne
1/2 tsp Ground Habanero
1 1/2 tsp Black Pepper
1 1/2 tsp Ground Sage
3/4 tsp Nutmeg
3/4 tsp Cinnamon
2 T Salt
2 T Garlic Powder
1 T Sugar
1 T Onion Flakes

Keep on the shelf in an air tight jar

For small-ish batch (4-6 pieces):
3 T Spices
3 T Oil
2 T Soy Sauce
1 T Vinegar
1 T Orange/Lime Juice

Marinate at least 1 hour before grilling.

As others have mentioned, Italian Dressing.

I throw them in a bag with the dressing and black pepper and let them marinate.  Put them in a baking dish with sliced red/yellow/green peppers and jalapenos.  Bake.  Serve with rice.
