I have a weber. when all 3 burners are on low its still at 350.  I've used it about 10 times or more but it is new thisyear.
 



Eta: 350 seems high for burners on low heat. I would expect 250.  On high I get to 550 easily.

Probably normal. Use less burners and cook on opposite side to cook at low temps.

My Weber tops out at 350 according to the little thermometer that's built in.

I notice this on my grill when I turn the burners on first and then the gas tank, it just never gets hot.  When  shut it down I turn the gas off then turn the burners off, let sit for about 10 minutes, next I turn the gas back on and then the burners and reignite. Works fine that way.

We had something similar happen with a grill we bought. Check the instructions for troubleshooting - often times there's a safety valve that gets turned on during shipping. We went from about 250 to the 750+ (needed for baking off the manufacturing greases) after "rebooting" the grill.

There is probably a fucking chicom flow limiter in the line. Mine had one that would choke off the gas. Grill would never get hot due to junk ass rusty flow limiter.

Mine is 500 and climbing at the moment. 39 LaSalle's probably right. Open the valve on the tank slowly and then the burners. If not much flame, shut off burners and bottle. loosen the connection to the regulator, release the pressure there and start over.

I have a 3 burner Weber genesis, about 6years old.   Can get it to 250ish with the back burner on low and the door and a pan underneath the meat. I've done ribs this way. With all 3 on, 350 is about right.

I also have a new 3 burner Weber and I'd say that's about what mine does with three burners on low.

Is there some rule against using outside burners only? Center turned off?

My Weber Genesis goes to 500-600 all burners on.

Buy an adjustable regulator.
Available on Ebay.
Have defintive control over the amount of gas and flame hieght.
Turn it up and it cleans in an instant.

Go with just one burner and a big chunk of iron over it to diffuse the heat for low temps. If no iron is available, use a flat dry rock.  

Not a wet rock, because steam expands.
