For example, can you notice the difference in loudness between 55gr and 62gr?

There are a lot of factors.  Least of which is probably bullet weight

Not really

noise is more dependent on chamber pressure



now 5.56 is normally noticeably louder than 223 in the same bullet weights because of higher operating pressure
