I was going to at least take a picture to go with the recipe, but it looked too good and I just ate it instead.
Ingredients: 4 chicken breasts (thick is good for stuffing) 8 slices bacon 4 tablespoons cream cheese 1/2 cup shredded cheese 4 diced jalapenos (more if they aren't very big peppers) chili powder kosher salt black pepper brown sugar Preheat oven to 375. Mix the diced jalapenos (seeded and scraped if you're a wimp, just diced if you're not), shredded cheese, and softened cream cheese. Cut a pouch into the side of each breast and fill with cheese/jalapeno mix. Mix salt, chili powder and pepper and sprinkle onto both sides of the chicken. Wrap chicken with bacon (2 slices per breast) and pin the pouch closed with toothpicks. Sprinkle with brown sugar, and throw it in the oven. Cook for 30 min and enjoy. |

Forgot to mention, most recipes and pictures I found online seem to be just halving and seeding the jalapenos and then throwing the halves onto the chicken.
Dice them instead and mix them with the cheese. Makes it easier to spread onto the chicken and easier to eat. I guess you can use BBQ sauce like some of them called for, but you're covering up some of the good flavors in the recipe if you do that, IMO. |

It was just as good the second time around as the first. Can't wait until my Jalapeno plants start producing and I can do this with fresh homegrown peppers. Now if only I had a chicken coop, a cow, and the means to make cream cheese I could make this meal completely from scratch. Maybe someday. |

I don't measure spices/seasonings when I cook. equal parts salt, pepper and chili powder is what I used, and just enough brown sugar to sprinkle on top of the bacon. So, if I had to guess we're talking maybe ~less than1 tablespoon total pepper/salt/powder mix per chicken breast (rubbed on both sides), and 2 pinches of brown sugar per breast? Just enough to coat the breasts lightly (we're not breading them/covering them completely) and enough brown sugar to add some flavor/glaze. Sorry I can't help more than that. I'm not a very technical cook, I just go with what looks/tastes right. |

I'm planning on adding, Chives and chopped bacon to the filler. Got some raw milk yogurt cheese from an unnamed source(don't need FBI HRT attacking them) for the filling. Lets see what happens on the grill tomorrow. |

DAMN, now i need to run to the store tomorrow. thanks OP, this follows my low carb diet to a T even with the brown sugar. i bet this would be killer on the grill. might have to limit the amount of "stuffing" to get it right though. damn, now im hungry too.
