Before I left school I promised one of my teachers I would bring some bullhead back with me in the fall (he had never eaten catfish before, and I told him that I could get him something that was close). Last night I set a couple jugs out and got two of them (one is between 1 3/4 pounds and the other is pushing 3 pounds which isn't bad when you consider that the state record is 3.5). This morning I set trot lines around where the successful jugs were last night, and this method has always produced well before so I expect that I will have a few more by tomarrow (which is good because the teacher is my Karate instructor and if I don't bring him some bullhead he may very well just kick my ass [:D]).

I'll post some pics when I can dig up my brother's digital camera, and before I kill them (why is it such a PIA to finish off bullhead?).

Anyway the only way I know to cook bullhead is to fillet them, dip them in crushed saltines, and fry them, but I figure that there has got to be better ways to prepare them. Anyone know of any? Thanks.

   Prepare a mixture of 1cup mustard and 2 tablespoons hot sauce. Add water until thinned. Marinate fillets for about 30 minutes, batter and deep fry.
