I really want to ride in a Fighter Jet but after watching that I think it would the most awesome regrettable thing I could ever do

I'm doing it wrong in flight simulators, after watching him fly.

When he goes over a mountain top, he inverts instead of simply pushing the nose down.

I'm not sure if its just for show, or if that's how you actually are supposed to do it.

I think that pilot just has a serious dislike of negative Gs.  Or possibly acid-reflux that was acting up earlier.

Has to do with a lot of things. The human body can take more positive g's than negative. Visibility has to with it as well, also easier to see a sam launch. The wing lift is designed to pull the aircraft up, so you can pull a tighter turn by pulling the nose "up" rather than pushing it down. When flying NOE this is important. You can bring the aircraft back onto the deck much faster.
