When I was a kid I used to wonder how people could eat it.  Now I wonder how people get by without it.

I also picked up a HUGE tub of Utz cheese balls.  It's like this tub, but twice as big around.

This is all since Saturday.

Goes great on eveything!  Make sure to slather it on a buttery Rueben sandwich with those cheese balls on the side

Rueben sandwiches got me started on sauerkraut.  Been enjoying brats on poppy seed rolls with regular old French's yellow mustard and a healthy heaping of sauerkraut.   Just had one for lunch with a side of cheese balls.

I've been having a slightly queasy feeling since Saturday though.  Those cheese balls are rich.

We used to make our own, before my grandma passed away.  Store bought just doesn't taste the same.

I should go make some kraut.

I do notice the store bought seems to have an off flavor to it.  Kind of like a beer when it gets a little skunky.

Shit makes me gag to the point of throwing up. It's about the only thing I can't eat even if I'm trying to be nice and eat whatever is given to me.

Went to bed hungry a bunch as a kid because of that shit.

Try homemade.( Cabbage and salt + time = kraut) You won't go back.
In an emergency, stay away from the canned stuff.
Get the fresh kraut that comes in a plastic bag.

Krrrisp is the stuff I get.  It pales to homemade, yet tastes slightly less store bought than the rest.

It sounds easy to make.  I might have to give it a try.

Amen, brother!!

My ma usta make it.  And when I tell people that, they usually say, 'yeah, my mom made it with kielbasa' or some such thing.

I say, 'No, my ma usta MAKE it.  Shred the cabbage, salt, crock, plate with a rock on it....you know, MAKE it.'

Then she'd can the whole crock.  I'd pop open a jar and eat the stuff right out of the jar with my hands.  I love the shit.

Sewer Crud, as I like to call it, is a staple in my family.  My grandmother used to make it in her basement.  My entire family eats it like its candy.  Except me.  I despise that vile concoction.

Try Bavarian sauerkraut if you can find it.  I prefer it to plain kraut any ol' time.

Several days to several weeks...

I broke down and purchased a kit with a gallon jar with an airlock.

I was fermenting kraut in the basement in a 5 gallon bucket. My son comes home and asks
"OK, who's cooking meth or whatever the heck that is in the basement"?
The jar with an airlock helps prevent the whole house from smelling like kraut.

I like to put a piece of horseradish root in the jar while fermenting. It gives it a lil' kick...

Sometimes I even like a little bit of Bratwurst to go with my Kraut.

I will be making a batch this weekend, if I get some time.

Clausen (I think) makes some that is in the refrigerated section in a glass jar that is much better than the canned stuff.
