Freezer burn is dehydration + nasty taste.  



It isn't going to harm you, but it will be hard to convince you of that during the eating process.

Freezer burn is really only a surface condition. I had a container of gumbo that had a little freezer burn on the top. I just took the frozen container and ran it under some hot water to melt off the top layer and wash it down the drain. The rest of it was good to go.



For solid stuff like meats, it's pretty much ruined.

The freezer burn won't kill you but the jose ole might.

I found a venison tenderloin in the bottom of my freezer in teh garage from 2004.



It only had a bit of surface Freezer Burn in a couple areas which I cut off.




Marinated, cut to medallions, wrapped with bacon, and grilled.




Fork tender, and delicious.  




So....just depends on what it is and how it was wrapped.
