It's September, so now we're in the "ber" months, which means it's oyster season.   The Capt D's around here always have fried oyster dinners even though it' not listed on the menu.  That's where I get my quick fix.

Damn.
Kummomotos raw on the 1/2shell are by FAR, the best thing I've eaten in the past 15 years.

I'm not really an oyster guy either. I do love littlenecks raw or on the Grill for a minute but those

I can eat a very small amount of fried oysters in the form of a patty for a sandwich but vastly prefer oyster stew. As for raw oysters.....You can keep nature's snot ball.

There is no form I've yet had oysters served to me I didn't like them.  

Raw, steamed, fried, and soup/gumbo are all delicious. If there's another way to eat them PLEASE DO let me know!

mmmmm love Oysters any way I can get them.... I did once have a BBQ'd oyster out in CA, they put it on the halfshell, put some bbq sauce on it and threw it on the grill, it just cooked itself inside the shell at that point.  Fucking delicious.

I've yet to find them prepared well around here.  

Last time I had them was at McCormick's and Schmick's, which is a higher-end seafood chain.  The fried oysters had too much grease, and it wasn't even good grease ... the heavy, cloying kind that screams "cheap".

it might be a "ber", but with BP and such, not sure how much is coming out of Louisiana at the moment (and I think they are the only open season).  I don't think the rest of the Gulf coast has come into season yet - and even if they have, suspect most beds are still off limits thanks to BP

ETA- If you're ever at the one in the Hilton, have a seat at the bar next to this guy. He shucks for the whole restaurant and he'll keep the oysters comming all night.

Ahhhhhh.... Drago's Char-broiled Oysters.  Heaven on Earth.  I go there a few times a year , I live  ~ 20min from the restaraunt.

I have not been there scince the oil spill, tho.  I had heard they had to start importing oysters from Texas, Florida, and the North East , and that these oysters werent quite as good as Louisiana oysters. Perhaps not as salty, or such.

In the cold water Pacific Northwest, it's always oyster season.





Deep frying is my least favorite method of cooking oysters.





My favorite - by far - is to simply place the whole oyster, in the shell, on a hot charcoal grill.  When they pop open, pick them up with tongs, place in gloved hand and use tongs to remove half of shell.  Place back on grill and top with some garlic butter.  When the butter boils, remove from heat.  Allow to cool briefly and eat while hot.  A drop of hot sauce or lemon juice does not hurt.





I also love oyster stew.  Saute a finely minced Mire Poix in some butter until soft.  Reduce heat, add whole milk and heat until hot but not boiling - do not overcook the milk.  Remove from heat, add freshly shucked oysters being careful to lose as little liquor as possible.  Serve immediately with plenty of fresh ground black pepper.





Pan fried is OK.





Raw is good to go.

I love oysters, and I used to say they should *only* be eaten raw....






...that is, until I tried a fantastic oyster soup in DC recently. Pure... buttery... sweet... rich... heaven, with whole, warm oysters floating in it.







Now I'll make an exception.

Drago's:

   *  32 oysters, on the half shell
   * 1 cup (2 sticks) butter
   * 2 tablespoons finely chopped garlic
   * 1/2 teaspoon freshly ground black pepper
   * 1/4 cup grated Parmesan cheese (use Parmagiano Reggiano)
   * 1/4 cup grated pecorino Romano cheese
   * 1/2 cup finely chopped parsley

Heat the grill over medium-high heat.

Melt the butter with the garlic and pepper in a large skillet. Mix the Parmagiano and Romano cheeses in a small bowl.

Spoon some of the melted butter mixture onto each oyster. Add a pinch of the combined cheeses to each oyster, add a pinch of parsley, then place on the grill. Grill the oysters until they are hot,bubbly and puffed, about 8 minutes.

I usually wait til the water in Appalach cools down some before I start eating them.  Sounds damn good right about now though.

Not too long until Stone Crab season opens up though.  Once that comes in I pretty much have a one track mind.

I only eat raw oysters after the second cold spell. The oyster is a bi-valve. Basically filters
water thru it to feed. In other words, a shit filter. Don't like to eat oysters during the warm
months because of the fecal count in the water. Human and marine life. I always wait till
it gets cold and the bacterial level drops.
I do however eat them fried year round.
