They work great with grilled cheese and bacon sandwiches.

I'm going to try that.

Personally I like carmelized onions with sautéed mushrooms and a slice of Brie to top a burger cooked on the grill.
In fact served like that on a bun doesn't need any condiments.

stop stop!! first fry 3/4 strips of bacon then add the onions, then add your best green beans. crumble bacon back in, enjoy!!!

Chop up and brown some garlic in olive oil.  Add a little hard cheese like Asiago or Parmesano Regiano and make a risotto, a gratain or, mashed potatoes!

Surprised blue cheese hasn't been mentioned yet..   Sauteed onions, blue cheese, cream cheese, touch of milk, maybe some rosemary. Pour over steamed/grilled green thing of choice, or as a steak dipping sauce.

When I smoke a pork shoulder, I put some pulled pork on a pretzel roll, (Yes, I am the originator of the pretzel roll sandwich) , then some favorite BBQ sauce (tangy), and then top it with caramelized onions. (That's caramelized onions, not grilled onions.) I have also found that I enjoy the taste of the onions when I use Ghee to cook the onions in. Butter is a close second, but have to watch the heat when cooking. Ghee can take the higher heat.

I have been very pleased with the sweet onions available at our grocery store in the past few years. They seem to have an ample supply of Vidalias during their short season, and then have some sweets from Peru the rest of the year.

But I like them better if you slice them into rings (or half-rings) before caramelizing them.

Looking for something specific to do with them? How about leftover roasted chicken, caramelized onions and blue cheese crumbles on a pizza. I make homemade pizza about once a week for the family and this is a favorite.

fancy savory cruets;

chop a whole large onion fine, saute down in olive oil
add in a can of minced anchovies (1 small flat can)
saute that all down into the onions
add fresh chopped parsley and a pinch of nutmeg
stir it up
spread on toasted baguette slices
sprinkle with parmesan cheese
toast lightly to meld the cheese in

goes good with wine or beer

warning, the flavors are bold and will draw out lots of saliva

they go surprisingly well with light flaky fish with a high fat content. think halibut...
try blackening seasoning on the fish, then char it on the grill. mix blue cheese crumbles with chives, Worcestershire sauce , salt  and butter,  put a liberal amount on the fish, then serve it over caramelized onions
