So what kind of Pies will you folks be baking for Thanksgiving? I think I’ll make an Apple Pie with walnuts, as well as a Pecan Pie.

I got a pumpkin swirl cheesecake recipe that is always a big hit.  I also make a more diet friendly crustless pumpkin pie with Eggbeaters and Splenda that is actually quite good as well.

Yeah...I freaking love the holidays too.

It's also called buttermilk pie. I don't have her specific recipe, but it's similar to this one.

2 cups white sugar
2 tablespoons all-purpose flour
5 eggs
2/3 cup buttermilk
1/2 cup melted butter
1 teaspoon vanilla extract
1 (9 inch) unbaked pie crust

Directions:
1. Preheat oven to 350 degrees F.
2. In a large bowl, combine sugar and flour. Beat in the eggs and buttermilk until blended. Stir in the melted butter and vanilla. Pour filling into the pie crust.
3. Bake in the preheated oven for 45 minutes, or until filling is set.

My Pecan Pie recipes is as follows"


1 cup white corn syrup
1 tspn. vanila extract
1 cup light brown sugar
3 eggs (slighty beaten)
1/3 tspn. salt
1 cup crushed pecans
1/3 cup melted butter
whole pecans for top of pie
I use Pillsbury Pie Crust (you could use whatever you want)

Combine syrup, sugar, salt, butter, and vanila, mix well. Add eggs and crushed pecans, mix well.
Pour all ingredients into a 9 inch unbaked pie shell. Top with the whole pecans.

Bake at 350 for approx. 45min.


Apple Pie recipe is as follows:

12 different kinds of apples of your choice (sliced, chopped, etc.)
4-5 Table Spoons of dark brown sugar
2-3 table spoons of flour
2 table spoons of Vanila extract
3 table spoons of cinn. or to your likeing
Phillsbury Pie Crust or I make my own

Put all ingredients into a large bowl, mix all ingredients, then place items into a unbaked pie shell, bake at 350 for approx. 30min, take pie out of oven and brush some milk or egg wash on the top of the pie, sprinkle a little white sugar on top and bake for another 10-15min.

Serve with Ice Cream, mmmm...

We just use the one on the can, but substitute brown sugar instead of white sugar. Serve with homemade whip cream, no canned stuff.

Two different Apple pies. One crumb, one with a double crust
NY Style cheesecake. I will make this. My specialty!
Two Chocolate pudding pies.
Pumpkin. the wife unit makes this.
Blueberry for dad, and only dad.
Banana custard pie.
Egg custard. Mom makes this for me. I can make it, but she enjoys making all of the pies listed above.
I was thinking about a pecan pie. Maybe I'll use your recipe.

Oh yeah...here you go...

3 pkg cream cheese, softened
1 cup sugar, divided
1 tsp vanilla
3 eggs
1 cup canned pumpkin
1 tsp ground cinnamon
1/4 tsp ground nutmeg
Dash ground cloves

Beat cream cheese, 3/4 cup of the sugar, and the vanilla until well blended. Reserve 1 and 1/2 cups of this batter. To the remaining batter, add the other 1/4 cup of the sugar, the pumpkin, and the spices. Spoon 1/2 of the pumpkin batter into a pie crust. Top with half of the plain batter, repeat layers. Swirl a knife through the layers several times for marbling effect.

Bake at 325 degrees for 55 minutes, or until center is almost set.

I have used a store bought pie crust, which turned out just fine. If you want to do it true cheesecake style in a springform pan, here are those directions;
2 cups finely crushed ginger snaps
1/2 cup finely chopped pecans
6 tbsp butter, melted
Mix the three ingredients and press onto bottom and 2 inches up the sides of a 9" springform pan.

but add about a 1/2 stick of butter and 2-3 oz chocolate (melt both in a saute pan and add to the recipe) and add 3 tablespoons of bourbon,
don't forget to pour the cook a shot or 2 ,

delicious
