I picked up a couple of racks of St. Louis ribs.  Any ideas on how to make them awesome?

Depends on what you are looking for , but I m doing this again for my family per request on the 4th

First thing, you can buy the whole slab of ribs and trim them yourself very easily. St. Louis ribs are just a slab of ribs with all the boneless meat cut off....and the whole slab is usually cheaper.

You're gonna wanna rub them in mustard, put a rub (seasoning mix) on them, and put them in the refer overnight. Then just smoke them low and slow....not over 220 degrees. It should take several hours. Wait until the last 15 minutes, sauce them, and move them over medium direct heat to glaze and get a crust.



Have fun. The more you smoke ribs, the more you will refine your recipe and the entire process.
