I would say that you could take it down to the point that you want it, but it might be easier just to sheet over it.

Make sure the brick does not continue above the ceiling or above the roof.  In other words make sure its NOT structural before you do anything.  Make sure its not holding up the rest of the chimney.  Make sure the ceiling is not bearing on it.  Etc. Etc....

If it is just a veneer of brick you can do what ever you want to it.

+1 The wall of brick is probably mostly non-structural but in there somewhere is a masonry chimney so check above the ceiling and if no brick work your way in from the edges until you get to the chimney.  I don't blame you for replacing the tile.

After you have learned to tile it will be the same cost and look better having real stone on the fireplace surround.

Pictures would be good.  
The hearth in your case is cprobably oncrete block with brick over and yes just tear it out.  IF drywall goes over the top then it probably isn't structural.  If you need a c;ean cut then rent a 14" cutoff saw with diamond blade.  the skil saw won't do all the way through.  Otherwise just use a sledgehammer from the outside in with a skilsaw and mortar up the boo boo before limonite.
