Xcopy will split the disk if you can find a copy of the program.

DVD Shrink will compress it down to fit onto a single disk.

You will get a noticeable decrease in picture quality putting 8gb compressed onto a single layer disk unless you are reauthoring to remove bonus features, subtitles, foreign language channels etc. I use Shrink all the time, but you can not maintain DVD quality video going from 8gb to 4gb unless you are removing a lot of extra content.

DVD X Copy has resurfaced as DVD neXt Copy (a free 15-day trial version is offered there), apparently now owned out-of-country and not subject to US court orders or copyright law.
