Update on 9/1/18: Adobe now says that it’s only Adobe’s video and audio apps that won’t be supporting Windows 7, while Photoshop and Lightroom will continue to support it.
Most Creative Cloud applications receiving updates in the next major release will still support Windows 7. It is only Adobe video and audio tools that aren’t supporting Windows 7 – Lightroom and Photoshop will still support the OS.

Win 10 is a hundred times better than Win 7 or Linux in any of its desktop iterations.  I'd seriously give it another look.  You can also run Linux directly on Windows now, look up WSL.  They support several distributions already and more are coming.
