You really aren't missing much.
Upgrading to a pro DX body like the D500 gains you a few extra buttons, a flippy screen, and you actually lose the built in flash.
Admittedly it feels a lot better in the hands and the buttons are a bit better laid out.
If you decide to switch to full frame, you get generally shallower depth of field, true aperture for lenses, true focal length for lenses. Buttons vary depending on model.
Often ISO performance for full frame bodies is better than DX bodies but the D500 kinda muddies that rule a bit and the D7200 isn't that far behind.
