I feel guilty eating so much protein on my off days. I try to eat fewer carbs on my recovery days but I am still eating 200+g of protein.

In three weeks, I've lost 2" around my waist, but have gained 8 lbs.

Am I on the right track? I am feeling discouraged.

Depends on your goal. If your goal is to get strong and be less fat, looks like you are doing good.
