I'll be road tripping this summer in Utah and some other places, and I was planning to bring possibly 3 handguns along with me.

One pocket handgun, one full size handgun with 15 round mags, and one .500 S&W revolver.

As I understand it, I will be allowed to CCW in Utah with my MO permit.

1. Any important gun laws I should be aware of?

2. What are some things I should definitely see and do while I'm in Utah?

3. Any words of caution, or areas of Utah or SLC that I should definitely avoid for safety reasons?

There are no areas to avoid for safety reasons. Downtown SLC at night just stay aware. Lots of homeless there.

Gun laws not really. Just dont shoot anyone unless you have too. Come and enjoy. Its a great State.

Sounds good!

What about rattlesnakes, flash flooding, etc? Any places I need to watch out for?

I'm planning to do about 2 months of hiking and camping all over UT if possible.

In regards to flash flooding you'll just have to be aware of the weather. Lots of desert around here that isn't used to handling large quantities of water. You're probably more likely to slip off a cliff than to get bit by a snake or something. So long as you observe proper camping etiquette (not leaving food or trash out, etc.) you're not very likely to be disturbed by the wildlife really.
