Well if they charge more then 40 bucks for a standard cut, stay away. IMO If you hang it in the air skin it and quarter it up urself. because when you make sausage it dont always taste that great. it better to smoke or bbq the sections.

Call the Walthourville Meat market and also try Ludowici meats. Other than those two, ask around, there are several locals who can do this for you pretty cheap, but you have to know them or know someone who does. Talk to any hunters in the area and they will know someone.
