Alright, have my search nailed down to these two safes.  They're within approximately $200 of each other (plus one local AmSec used for a mild discount).  I do appreciate the Brownings better fire and burglary ratings (60 min/RSC vs 45 min/CDOJ), but the AmSec is a tad more spacious inside (2.5" taller, 1" wider) and they seem to be a well regarded safe maker rather than just a reseller/rebrander like Browning.

What are the hive mind's thoughts between these two?  Since I'm sure it will come up, Any other 36" width safes suggestion in this ballpark are welcome.  I'd love a Fort Knox, but I'm trying very hard not to spend more than $2k on this venture.

I'd go with the Amsec, the Browning has a composite door where the FV is going to have a 3/16" steel plate door. If you want to up your budget I'd skip the Fort Knox and get a BF series from Amsec. IMO they're the best price to security value on the market.
