Which one do you guys prefer and why?  I am going to build one for all around use varmint hunting plinking and possibly 3 event action matches.  I will have a flat top upper and free floated barrel

I recommend both, I know that isn't a lot of help but at least the great thing about AR's is you can change at any time.  I do know that if you build a 20" that you won't like toting the extra weight of a full HBAR for any action shooting.

Buy either or and have the other upper ready.  This was you have 2 gun at the price of 1 and a half.

If only one can be chosen then I always say the carbine. This is just what I prefer for my uses. It sounds like the carbine would fit your requirements. Unless you are talking about long range varmint hunting?
