Anybody know how difficult this is.  There is a manual I'm thinking about buying on ebay

I believe the process involves welding some extraneous items (trunion and some other stuff) to the receiver section.  When I had the UZI urge I just bought a crappy non-functional Norinco that had been a re-processed IMI UZI.  I replaced all of the defective parts and eventually ended up with a working UZI.

I later traded it for... guess what... another AR.

In short, the process is pretty involved if you don't know how to weld.
