Off the top of my head, I'd say you're thinking of Carmina Burana, specifically, the segement entitled "O Fortuna"

same composer's music is used in Apocolypse Now when Duvall's character
is flying in to the beach to surf, "Ride of the Valkyries" I think

"Carmina Burana" for Excalibur.  The piece used in "Apocalypse Now" is called "Ride of the Valkyrie" or something like that.  As a humorous exercise, next time you are using a computer thatis more than a a couple-three years old, go into Windows Explorer and look around for "Carmina Burana."  A MIDI of it used to be included as sample media or something.  All I know is that I had two different machines that included it.

Carmina Burana was composed by Carl Orff based on a series of suprising erotic religous poetry written by 13th century monks.

Wagner had nothing to do with it. "Die Valkure" AKA "Ride of the Valkyries" is the piece from Apocaypse Now. That is Wagner, from the Ring Cycle.

The music is 'O Fortuna' from 'Carmina Burana'.  It was written by Carl Orff (1895-1982).  Orff set the music to Latin secular poetry from the 12th century.  The words are mostly in Latin but some are archaeic German.
The music has been used in several movies including 'The Doors', 'Excalibur', and a trailer for 'Glory'.  It has also been used in some commercials.
