Today was the Fun in March cookoff at the Gator Pit facility. M38A1 came in from Austin and helped me cook and was great company. The cookoff was a great learning experince for all involved.

Brisket: 10# brisket, rubbed with TexasBBQ Rub Brisket blend, cooked over oak.

Slicing across the grain.


Ready for turn in.

Ribs: Pork spareribs, trimmed St. Louis style and rubbed with Seven Flags Grillin' Mud (spicy) and glazed with Texas Pepper Jelly Pineapple Habanero.

Halfway done, ready to foil.


Glazed with Texas Pepper Jelly.


Ready for turn-in.

Chicken: 3.5# chicken. rubbed with Italian dressing and Texas BBQRub. Cooked for 3 hours at 250*.


The results:

1st place ribs, 2nd place brisket, 3rd place chicken, reserve Grand Champion. Not bad for a days work. A big thanks to M38A1 for helping with the cooking and shooting photos.

Just the pictures are making me drool. I can't imagine tasting it. I'd probably faint right into my plate.

Awesome! Always cool to win 1st, 2nd and 3rd. It's not 1,1,1. But there is just somthing neat about 1,2,3. Makes it feel like you won the whole damn thing.

That looks great photokirk. I am glad you all had a good time.

BBQ is by far the best food in the world.
But fear not. Memphis in May is right around the corner and this year my wife will not be ruining the trip for me. I will be there and will come back 75 pounds heavier.

www.texaspepperjelly.com It's great stuff. I also like to put Strawberry Jalapeno on ribs for a more mild flavor. It's good on ice cream as well.
