Some of you may know that I like to cook and fairly often post dinner pics.

Since it was Christmas, no guns, knives, staplers etc.

I dry aged the Beef tenderloin roast for 3 days.



Before putting it in a 425 deg oven, I applied a cushed peppercorn and Kosher salt crust




Gotta have some greens with meat. Fresh tomato, arugula and Italian parm cheese in a garlic balsamic dressing



The sauce is a wine reduction which was simmered for several hours with a boquet garni of rosemary, thyme, peppercorns, garlic, onion, bay leave, porcini mushrooms.




To top it off, good friends and family
