I would adjust my plans according to how big the jackpot was, of course.
At the 3 million dollar mark, I could buy myself a nice house with a truly non-trivial home theater system and separate music listening room, and with TWO workshops, and retire instantly, which in my case only means that I wouldn't feel like I HAD to have some source of income derived from me working. I might continue to do what I do now, but purely for the fun of it, and the desire to build a reputation as an asskicker in my chosen profession.
My gun collection would be fairly large and rather interesting.
I would also complete my flight training and purchase an airplane in the twin engine world, somewhere between a Piper Navajo and a Beech King Air.
If the winnings were in the 3 to 10 million dollar range, I'd have FOUR workshops and for aircraft I'd be looking at Czech L39 Albatross jet trainers, or maybe even a T-38.

10 to 50 million I'd build the best home theater anyone on earth has ever seen, in a very nice house that's not worthy of the term MANSION, but close. At the upper end of this range I'd be the only civilian in the world to own a functional F-16 fighter jet, and I would get the training and certs necessary to fly it, and subcontract the maintenance to qualified personnel.
My gun collection would be TERRIFYING.
Over 50 million, the house IS a mansion, but a very modern one with all the latest conveniences and it would be a showcase for modern home automation technologies. Design inspired by Frank Lloyd Wright. And the F-16 would have been sent to Lockheed and totally overhauled, refurbished, and updated with the best systems that a well-heeled civilian can possibly get approval to own.
My gun collection would be the envy of most of the firearms museums in the world.
In the 100 million dollar and over class, I'd own flyable examples of not just the F-16, but also F-15, F/A-18, F-4, A-4, and a few others. Maybe even an Aardvark. (FB-111) Possibly even a C-130, and certainly a good spares inventory for whatever I do have, and the C-130's the portable maintenance depot.
My gun collection would be outclass the Ministry of Defence's Pattern Room AND the combined collections of the BATFE and the FBI. It would be the best ever. Anything that's been fired before would probably be fired again, unless it was far too valuable to risk.
