If you leave out the okra, you need the file powder (ground sassafras leaves) to thicken up the gumbo and give a hearty feel to it and help stick with the rice.

Also, amount of okra/file depends on blond vs chocolate roux as the blond roux will thicken the gumbo more.

Good okra is bad ass. It’s also bad ass in gumbo.

Sometimes I use it in gumbo, sometimes I don’t. It ain’t a religious thing for me.

I don’t know if it’s African, or chocktaw, or what… I just know that I’ve had gumbo both with and without okra all over LA, and that I like it both ways.  Near as I can tell, gumbo is made differently by just about anyone that makes it, and its origins are from making something good to eat out of whatever was available.  Okra is a common garden ingredient for my Louisiana and East Texas in-laws, and I suspect that’s true for a lot of rural folks in Louisiana.

Took my eye off of it for one second, and my dark roux is now too dark after I added the chicken broth. Any fixing suggestions?
I worked with a guy from LA, and he was genuinely pissed that there was a seasoning that you could buy that was labeled 'blackened.' He said the only way to achieve that flavor was over fire.

Blackened seasoning is just a spice that is intended to replicate Paul Prudhomme's blackened redfish flavor profile.  The seasoning has nothing to do with the cooking method.  For that, you'll have to follow the recipe for blackened redfish.

I’ve been cooking gumbo for over 40 years, and I’ll put my okra-less gumbo up against anyone’s.

Okra is a mostly New Orleans thing, although many Cajuns do use it.

But it is not in any way a required ingredient for “authentic “ gumbo.
