Because they're the perfect combination of sweet, spicy, salty, and fatty. Combine them with some king oyster mushrooms and some pickled Daikon and you've got every flavor covered.

Short ribs are delicious.  I like to cook them up like a ribeye or any other steak.

The way my local store cuts boneless short ribs is nice.  They're like bricks of beef.  Mostly flat on all sides, so very easy to cook evenly in a skillet.

Yes, short ribs have a very high fat content (something like 75% of their caloric content is from fat).  That's what makes them so delicious.

Yeah, all the Tri tip, skirt streak, flank steak, short ribs...etc have all shot up to $9+ which just seems crazy.

For that one, kalbi marinade is all over the place and usually something easy to just wing

You need a fruit to break down the protein.  This can be pear juice, kiwi, pineapple, or even soda
Then you need garlic, green onions, and ginger. Smash it or grate it so it's fine enough to flavor the marinade
Soy sauce, sake, black vinegar, and either some broth or water make up the liquid of the marinade
Brown sugar, honey, or white sugar. Could even be a sweet fruit juice for sugar
Then some white pepper, pepper powder (I do my own home grown peppers) and whatever other spice you want

Don't marinade more than 12-24 hours as this will break down the meat.
Grill them up hot and then pair them with a ton of side. Always prep enough for leftovers

Lulz. I actually screwed this step up. Was being lazy, should have sautéed them first. I figured they'd cook up fine in the braising liquid. They did, but the flavor wasn't quite the same as if I would have cooked them down a bit.

It's a classic moo Manao sauce (chilis, lime, fish sauce, palm sugar, garlic, and cilantro), just tossed and served over cabbage and cucumber with mint and a bowl or rice. thought to try this instead of the normal blanched poek. Not a bad dinner at all.

I did until the meat prices soared.  I'm not paying $10 a pound for something that is 65% bone and cartilage.  I used to buy them in huge batches, marinate in "We Rub You" bulgogi marinade for a couple days and grill them over charcoal every time my MIL came to town.  Never any leftovers.

Same for me, and they are usually like 3/4" of meat on the bone at most, so very little meat to bone ratio.

Butcher at the end of my street has nice slabs but are even more per pound.. still worth it on occasion.
