Well I know the green stuff they sell at sushi restaurants is not real wasabi and I'll admit I've never looked in a grocery store to see if there was any real wasabi.
If all I need to do is look in the right spot then will try some next time I go to the grocery store.

This is the way I understand it as well.  The chef at the place we go to is from Japan.  He laughed and said we are not getting real wasabi around here.  He told us it is horseradish with a few other things mixed into it.  I had no clue, but apparently, most people don't......

My wife and I generally eat sushi on special occasions for me since I like sushi more than she does. I might try to see if there's a place around that has real wasabi for one of those. I have a feeling though that there's no place around here that has any.

Wasabi is a plant. Plants have roots. Wasabi paste is made from the rhizome of the plant. Rhizomes are underground STEMS which roots come off of. Same with Ginger and Turmeric. They are both plants, that have roots, but the Ginger and Turmeric we consume, comes from the RHIZOMES of the plant. 100% the same as Wasabi.

Once again, you can see all this information for yourself with a single Google search on Rhizomes.

Sushi was invented as a way to package preserved rice and fish in to-go meals.  It was the Japanese equivalent to gas station hot dogs.  It has since been fetishized. Fake crab and cream cheese is probably more true to real sushi than toro nigiri.  Anyone telling you that you are eating it wrong or that you are insulting the sushi chef master by dipping your sushi in soy sauce is full of shit.  It's like saying that you are insulting the hot dog cart chef master by putting on the wrong kind of mustard.

You can still get "original" sushi if you want. Nazerushi... And it is awful. It was just a way of preserving seafood before modern refrigeration. And like most ancient food preservation things, they were done out of necessity and not flavor.

Place for that image, a full roll of either the tuna/salmon runs $6. Cali rolls are $4. Same place as the boat I pictured above with the tempura crawfish. With it being 1 mile away, I eat there a little too frequently.

My personal preference tends to agree with you with a couple exceptions, but I don't blame anyone for eating what they like. As for my exceptions...

Soy is a sauce.
Ponzu is a sauce.
Unagi NEEDS to have that eel sauce.

Edit: For Unagi, the vast majority of it is from China or other parts of South East Asian (primarily Korea). I would be willing to bet that 95% percent of the people in here who have had Unagi have never actually had JAPANESE eel. It is just too cost prohibitive. But that is also a reason why that sauce is so important, because Chinese/Korean eel is trash (comparatively speaking, I still eat a ton of it) and needs sauce.

Eel sauce and spicy mayo (made with kewpie) are always welcome on mine, depending on what it is.......

Not exactly sushi, but the place we got to has mussels as an appetizer.  He covers pre-cooks them in the oven with butter I think, then a light slathering of Kewpie, and some seasonings, then under the broiler for a few.  Man are they good!
