I usually smoke my Tri Tip but decided to pan sear this one and finish it in the oven at 300 Deg. Turned out very nice as a change to smoked meat.







The GF made Christmas (yes Christmas) cookies

Seared in a very hot pan then cooked in the oven to an internal temperature of 118 deg then allowed to rest for 15 minutes.

Didn't say it wasn't good.  But I hold firm to the belief that the only right way to cook tri-tip is over hardwood coals.  This is coming from a guy that cooks upwards of 300 pounds of tri-tip a year.

I accept that as your opinion and since I have never had your Tri tip I am open to the fact I may come to the same conclusion. My point was you originally stated it as fact rather than opinion:

In addition, is it your intention to make me feel "little" for cooking a tri tip in the same fashion that many other cuts of beef are cooked? IOW pan seared and then finished in an oven. I appreciate and envy quit frankly that you cook over 300 lbs of tri tip a year. If you follow my dinner pics at all you may have noticed that I know a tad about cooking and the technique I used is pretty standard fare for beef of all types.
