Good question, since Hollywood seems to think officers are addressed by their ranks. It is Sir for a male and Ma'am for a female in the Army at least. I used to like to call the female officers Madam. It really pissed them off. They would then correct me that is was Ma'am to which I would reply, Ma'am is the contraction of Madam, Madam. I hated those worthless ineffectual lumps of meat in a man's uniform.

In the USMC it is "Ma'am". If addressing a group of female officers it is "ladies". Only an idiot or bad script writer would call a woman "sir".
