Does anybody know which fonts were used for the dial and bezel of this watch (for both the numbers and letters)?

I think you pretty much nailed it for the numbers (they're just squashed a little horizontally on the watch), but the letters don't look right.

I think the Bezel is Eurostile or a variation thereof see http://new.myfonts.com/fonts/agfa/eurostile/





Type in "1234567890 UNITS PER HOUR"



"SWISS MADE"  and text under "Rolex'  looks to be Eurostile Condensed, but spacing is off

Yeah, the numbers are definitely Eurostile Bold Extended #2 or something extremely close to it, but I don't think the text on the dial below "Rolex" is part of the Eurostile family.  Look at the leg on the R specifically.  It's straight, but the Eurostile fonts R has a curved leg.
