9 grain wheat for most things, regular whole wheat if I can't find 9 grain..
Jewish Rye for Rubens and a few other sandwiches, dark Rye for other types of sandwiches.

Fresh Khubbuz right from the oven in Iraq was phenomenal.  I've been trying to learn how to make proper baguettes but haven't succeeded yet, when done properly and bought from a bakery in France they are amazing.  I have had some good luck with no knead bread though, as seen here:

I've changed it up a little though, I use 1tsp of salt, and bake at 450, the flour burns at 475.  I also use waxed paper heavily floured to form the loaf and let it rise, the towel is just too messy.

Gluten free and it is accursed stuff.

My homemade cornbread i make from Indian corn. Below is a few pics of bread made from the Mandan Red corn i grew
The bread comes out looking bluish-purple.
Here's a loaf fresh from the oven.
