So I go to the brewstore  Friday and got the Brew O' the Month, an Irish red ale.  Talked briefly with the brew lady about the process, and she said she would send a link to the recipe as their copier was down, but she forgot.

Mini mash, 3# grain bill, some pale LME and some dextrose.  I am gonna search to find the recipe, from Zymurgy magazine as I don't have any clue as to what is supposed to be what, but I just got through with a "seat of the pants" brew. Kinda fun actually.

The only surprise is an OG of 1.078, though that was after pitching a Windsor yeast slurry. But still, gonna be strong. And dark.

Also used my new wort chiller. I LIKE IT!

Well, I got somewhat close, sorta.  It will be beer.

Just started the "half hearted" ale.

ETA:  In the fermenter and all cleaned up, drinking a homebrew.

It was a mini mash kit put together by the local brewstore.

Just brewed an all grain Belgian  triple ale , 90 min boil

25 lbs Belgian Pilsner
6 lbs Belgian candi sugar at 15 min
Hallertau hops   5oz at 60 min 2oz at 15 min
Irish moss
wlp500 yeast ( second use )

mash at 154 with 7 gallons
sparge at 174 with 7 gallons

my double just got done today and put in kegs , I put the Tripple right into the fermenters used for  the double , should turn out good.

3 gallons of apple/strawberry kiwi juice inmate brew today. 4lbs table sugar, yeast nutrient, pectic enzyme and bentonite.  Reused a cider yeast .

I’ll be racking my Belgian Wheat to a glass carboy this evening. First time doing a secondary. This was a more expensive extract recipe, and I really don’t want to ruin it.

I think I want to start doing 1 gallon batches. 5 gallons is far too much for me, especially if it doesn't taste exactly right. I already have gallon glass jugs and airlocks from brewing wine.

Well shit. I checked on my carboy this morning, and the stopper had popped out overnight.

Damnit, 35 bucks down the drain.

I suppose I'll start a new batch tonight. Either an American Wheat, or Budweiser ale clone.

Making a 1 gallon batch of Midwest Supplies Pinot Grigio wine tonight. It was a 10 dollar recipe kit, so at 2 dollars a bottle, it would have to turn out pretty bad to disappoint. I like my new 1.4 gallon Big Mouth Bubbler.

If your stopper is wet, it will do that.  After spraying with sanitizer, I dry with the clean side of a paper towel.  Seems to help.

I'm just getting back into brewing after a long hiatus. While my first batch was fucked up from not reaching a decent boil we still drank it and it was good enough to get you drunk.

Second batch was Reapers version of Orfys mild mannered ale. I tapped it two days ago and it is excellent

I have to keg up a cream of 3 crops and a fucked up oatmeal stout that I got horrible efficiency on this weekend.

Nice to be back in the hobby. I can now drink great beer for the price if Busch.

Well , didn’t get to brew , hope to this next weekend as well as botteling another Belgian dubbel. I reached out to a local brewery and offered to work for free a few times a month in exchange for being able to learn from the brewmaster , should be helping can later this month and if all goes well hopefully I’ll get to be an unpaid assistant once in a while

Thursday 3-8-18. My wife and I are starting a chocolate, vanilla milk stout.
Standard milk stout with chocolate nibs (rehydrated in Jack Daniels 1/2 added at the end of the boil). During the second fermentation the vanilla and remaining chocolate and Jack will be added.

I wouldn't add any JD/cacao nibs until your primary fermentation is complete. You won't be gaining anything, right?

Some people have had success adding cocoa powder at flameout. It'll drop out as the beer clears.
EDIT: If you can get some (Amazon.com, for instance) you should try using Cholaca.

Brewing the BB Scottish ale kit today.  Making it a 90 shilling by adding 3.3lbs golden light LME and half an ounce of EKG.  Did this last December and it turned pretty damn good.  Don't have many left.

I didn't brew this weekend, but I did collect 45 gallons of snow and melted it down.. ended up with just over 6 gallons of "snow water" that will be used for a Vanilla Snow Seasonal. Never done one this way, so here's hoping it turns out..

Just kegged the Pliny the Elder clone from Morebeer.  Overshot the OG by a hair at 1.086.  I believe it should have been around 1.08.  Fermentation was also a bit more efficient than intended with a dry 1.006 finish.  I think the target was 1.010.

We'll see how this 10.24% ABV IPA turns out after it finishes carbing in a couple days.  

While the Pliny is grain, I also have an extract version of this fermenting.
