Last night I made a rice and gravy with a beef sirloin roast and some pork sausage. Came out great. Also had some smothered green beans and a few Mary B's biscuits.
I added some tomato past and some red wine, it made for a really good gravy. |

Cooked some stuff for the week tonight. Did a red sauce for pasta, and a batch of made from scratch sloppy joe's. The red sauce came out decent, but I'm not too sure about the sloppy joe's. I just kinda winged it.

I grilled some skirt steak for dinner. Had it with a salad and baked potato. I marinated it for about 6 hours in a cup of Worcestershire sauce with about an ounce of soy sauce added, three crushed cloves of garlic, about a half tsp. of rosemary, about a half tsp. of marjoram, some cracked black pepper,a good pinch of crushed red pepper flakes, and a couple ounces of olive oil.
The steak turned out great, very tasty. Skirt steak is my new favorite cut of beef. |

It was a nice day here in SWLA so I fired up my offset smoker and did some country style pork ribs, brats, cajun sausage, pork chops, and boudin. Inside we cooked roasted potatoes, baked beans, and some other veggies.

I made some Indian style lentils last night.
Today: Ribeye, baked potato and green beans. I simmered some garlic in the bacon grease I had from making bacon bits. Attached File Attached File |

Tonight I did baked chicken thighs, roasted veggies, and red potatoes boiled in crawfish seasoning. Also made a taco soup for my lunch this week.

Today for lunch Dad and I fried fish and shrimp. Mom, not able to let us do everything, did boiled potatoes, fries, and carrots inside. And a salad.
For supper, I did pork steaks in a gravy, steamed broccoli, and herb roasted red potatoes. And a pot of legume stew for work meals this week. Attached File ETA: If anybody knows why pics I upload directly from my phone post upside down, I’m all ears. |

Stir fried brussel sprouts tossed with oyster sauce, lime juice, a little gojuchang, honey and pickled sweet drop peppers.
Absolutely delicious. Also had some delicious crusty Italian bread with garlic infused olive oil for dipping. I take a mortar and pestle and mash up a little herb paste with rosemary, thyme, sage, oregano, chili flake, a little crushed garlic, lemon zest, kosher salt and pink and black peppercorns and put a little pile of it in the dipping oil to dab the bread in. Fantastic stuff. |

For lunch today I grilled some stuff for my new lady friend. Pork chops, boudin, and sausage. Roasted potatoes, beans, and garlic bread inside. It was terribly windy today, so my fire was never right and the chops ended up dry. She didn't seem to mind though.

We are eating out of the garden these days.
Breakfast was home fries with onion, celery, mushrooms, cheese and bacon. Potatoes, along with the chives and the herbage we raised. Topped with scrambled eggs from a buddies of mines birds. Lunch was stir fry, Bok choy and nappa. Dinner was potato and kale soup. My daughter did an amazing job with it. |

My parents can't cook, and as a consequence, neither can I, so I have to rely on simple recipes.
I've been watching Mark Rippetoe's (author of possibly the most popular beginner strength training program book in the world) "Texas Cafe" series and I tried the hamburger steak. Man, I was shocked at how good it was, for something so simple! 80/20 ground beef, mixed with chopped onions (I used sweet Vidalia), some bread crumbs (I used Italian seasoned) and salt & pepper. Form into patties and cook in a cast iron skillet in beef fat. Delicious! It gave me a new appreciation for beef tallow. How to Make Hamburger Steak with Mark Rippetoe | Texas Cafe Classics |

Last night, lemon herb chicken pitas with grilled squash, roasted mushrooms, onions, fresh tomatoes and shredded romaine. Topped with tzatziki.
This morning, homemade chorizo with potatoes and eggs. Made 5 pounds yesterday. Tonight, probably either pork lettuce wraps or homemade Chinese dumplings |

I had smash burgers on my new to me griddle. Picked up a hardly used 36” 4 burner for a $100.
They were easy to make but there was a bit of a learning curve using the griddle and cooking 3-4 items at the same time. Attached File Attached File Attached File |
