I will be keeping it under a 1000 yards. My zero distance will be 100 yards, and most shots will be taken between 300 and 50 yards. Would I be better using a 20 MOA mount or do I need to go with a 0?

not required, but why not? not really anything to lose, and you gain the option to shoot way out there.

Too much unknown.  

Is your max distance truly going to be 500 yards, or will you occasionally be going farther?  What cartridge/bullet are you using?  How much elevation adjustment in the scope?  You can *probably* get by with a 0*, but there is no guarantee....really, there is no reason not to go ahead and start off with a 20* base.

Are you shooting a BB gun or a Plasma rifle? One the answer is yes, the other is no.

Assuming you are shooting a normal centerfire cartridge and assuming your scope zeros at 100 somewhat in the middle of the travel, you shouldn't need additional elevation for 300.

With the rifle zeroed at 100 rotate the elevation to see how much you have that can be used for longer distance.

  Being careful to not max out and go beyond , hurting the scope.

 Now you have a max number that is what you can use.

  Look up your particular load and it's drop in moa or mils.

 Now you know how far out would you be able to dial in correction  with this particular scope ,  mount and its height above the bore.

There is zero reason not to go with at least a 20MOA mount.     I like lots of 'up' in my scope.  I even have my 1-4 on my 16" AR in a 20MOA UNi-Mount.

I would go with 20moa. You probably won't need it for <500, but it won't hurt you to have it. Just don't go with a 40 moa or anything huge. Without knowing your scope, rifle, and ammo ballistics I can't say what your max adjustment would be with and without the extra 20 moa. You won't know for sure until your scope is zeroed, with a zero moa base it might not be in the center of its adjustment range. Hopefully it will be close or off with more come up left.

It's a Desert Tech SRS Covert with the 16" .308, but I'm looking at getting the .300 win mag conversion for it.

Scope is Burris XTR II 5-25x50.

Your scope has 90 MOA travel.  Get the 20 MOA Base.
