I know the love some folks around here have for bacon.

I had never tried venison bacon before.  My neighbor gave me 2 separate packages from two different butchers/smokehouses.

It is really good and I would recommend it to anyone.

The stuff I had today came from Maplewood Meats in Pulaski, WI.  It is a really nice butcher shop/meat processing plant.

Personally, I get burnt out on venison sausage, hot stick/landjaegers in short order.  But bacon serves more uses...  weekend breakfast for the family, etc.

Granted the venison bacon is thicker and processed vs. sliced like the real stuff, but it will work really well for any BLT or grilled-bacon-wrapped-meat-stuffed-with-cheese-heart-attack-waiting-to-happen dinner pic on arfcom.

I'm with you. I've never heard of such a thing. We cut as much fat off the meat as we can. Don't see how you can have bacon without fat.

Must be a corn fed deer thing.

The "venison or deer" portion of the product is 100% lean meat.  There is no deer fat in the process.  All-meat venison trimmings mixed with beef and/or pork and spices.  The fat is added via the pork and beef in whatever ratio that processor uses.

It is seriously good stuff!

Venison "tallow" as we call it around here, is disgusting and ruins the flavor of venison, especially if the deer is old and not from an agricultural area.   We ate that shit as kids in home-processed venison hamburgers that were cooked on a tailgate while ice fishing and it always was gross!  Like fricke'n hand cream that tasted nasty!    (FYI...We actually drive our trucks out on the lakes around here. The clubs even put bridges out over the ice shoves and cracks!)

Then they must form the bacon in some sort of sausage press/die thing-a-ma-job.

It tastes really good and is a fantastic way to eat venison.  Not the cheapest way, but a great use.

Had it for the first time this year. Holy shit is this stuff good. And a lot leaner, not as greasy. Although regular bacon rocks too.
