Since this is a survival forum, I will mention that you can substitute Velveeta for real cheese and then you can skip the milk, or maybe just add a little. The advantages are that Velveeta is way cheaper than real cheese and can keep for a couple of years without refrigeration. The disadvantage is that Velveeta tastes like ass. Some garlic, powdered mustard, black pepper, whatever, can mask the taste. Done right you can make passable mac n cheese with cheap Velveeta.

I pour in a couple cans of cream of chicken soup and some diced spam or ham. It makes for an excellant meal, top it with bread crumbs

if you want it like box mac and cheese i use just sharp cheddar, butter, touch of milk or cream and a couple of table spoons of Parmesan cheese and sugar. baked mac and cheese is a little different, but i dont have the recipe in front of me right now.

Here is how I do it Whiskey

Macaroni and Cheese

Cook one box elbow or twist macaroni

Make a medium white sauce
Make a roux with 3 Tbls butter, 3 Tbls flour. Cook the roux until golden brown.
Add 1 ½ cup hot milk.
Stir until the mixture thickens.
Add in 4 oz shredded cheddar cheese, stir until melted and
Incorporated.
Add 1/8 cup sherry
Add black pepper, salt, cayenne pepper,
Several grates of fresh Nutmeg, and dry mustard, to taste.

Mix the cheese sauce with the cooked macaroni
Butter a casserole dish, and pour in the mac and cheese. Top with another 4 ounces of grated Cheddar cheese.

Bake at 350° for 20 min, or until the cheese melts on top.

Remove from oven, serve.

Pro Tip:

Just a dash or two of Onion Powder can really dress up plain Mac 'n Cheese from a box. More than two dashes gets toxic, so give one dash and taste test first.

Give it a shot!
