I've got the kids outside harvesting acorns.  Needless to say, we have buckets full.  I now that you need to shell, blanch then roast them but how long do they keep after roasting and before shelling?  If they can last a long time without prepping them, I'll keep most in buckets and shell/prep as needed.

Update:  What a PITA.  Shelling the acorns took forever.  Also, I've got red oak acorns (which apparently has more tannins) so its taking a very long time to leech the tannin out.  I've been tasting them after each boil and they tasting better.  After this time, I should be ready to bake them so I'll let you know how they turn out.  Seeing as I have 10 oak trees in my yard, if this works it should be worth it.

I just might try that this fall.  I have several large white oaks.
