Went hunting with the wife yesterday and shot two rabbits. I marinated them in extra virgin olive oil, cock sauce, Jameson, beer, black pepper, garlic powder, a shot of lemon juice and a shot of Worcestershire sauce over night. I wrapped them in bacon and smoked them slowly over charcoal, using the marinade as a mop sauce. The beer you see on the grill was my wife's idea. I think it keeps the humidity higher, further preventing the super lean rabbit meat from drying. We stuffed Anaheim green chiles with extra sharp cheddar and crumbled bacon. We stuffed Chilean green peppers with wild rice and grated sharp cheddar. We coated all the peppers with extra virgin olive oil and grilled them. Yes, square plates. In all honesty the main reason I use those ones now is because it annoys a certain successful dentist in Kalifornia.
