Mahwah is a nice town, although it can be expensive to live there.
Make sure she can hack driving in the snow. Mahwah has old roads with lots of hills and turns. It is not a modern town laid out on a grid.
My experience with Ramapo University, drawn from several years on Mahwah Company 1 Ambulance, is to be careful at the student apartment parties. They can get really stupid really fast. We had to scoop more than a few students who were unconscious and barely breathing out of there. Silliness abounds, but the school has lots of resources and an excellent library if she wants to do anything academic.
Ramsey has some nice restaurants and bars. I never cared for the ones in Mahwah much. No good reason why.
The two of you must go to Kinchley's Tavern and get pizza. You must do this. It is written.
She will be nearby Campgaw, a county park with a small ski area and rentals. it isn't much, but it's in town. If she wants to do better, Mountain Creek is not far away in Vernon. Ramapo Reservation is another county park in Mahwah that has some very nice and easy hikes.
Ramsey Outdoor is a few miles down Route 17 on the southbound side. It has clothes and footwear not super cheap, but nice stuff and some high end stuff if she wants. It also has a gun department that you can't use because New Jersey...
However, you can go to Thunder Mountain in Ringwood and shoot trap and skeet. Also in Ringwood are several of the Revolutionary War iron mines and Ringwood Manor. If she's around during the summer, there is a re-enactment at Monmouth every year.
You'll be close to Bear Mountain, which has a magnificent road up to the top along with nice, shear drops a couple of hundred feet down and not much between your car and the atmosphere. They close the road for the winter. The summer view is worth a picnic. Stunning. You can get trail maps for all the places I mentioned at Ramsey Outdoor.
As noted, she can take the New Jersey Transit trains to Hoboken and New York City to catch some night life
