Depends on what you want.  The Kimber comes with most everything that is added to "base" guns later.  The SA is what I would consider the "base" gun for a custom fighting pistol.  If you want more out of the experience of 1911 ownership, I'd go with the SA, and start building on it.  If you want one "ready to go", and don't realy have the inkling to personalize it later, buy the Kimber.

Buy the Kimber, the SA MIL SPEC is just that, a .45 ACP that will fire with no additional frills. I like mine, but it's more emotional than practical.

Get a SA loaded 1911 instead.  Its well within your budget.

Avoid Kimbers with external extractors.  They don't have them to the point where they are consistently reliable - plus it's a solution in search of a problem.

Latter comment also applies to Kimber's Series II safety system, IMO

I agree with those that are suggesting you look at the SA Loaded Parkerized. It's an outstanding pistol for the money with many of the features normally found on more expensive guns.

Not to hijack (more like revive?) an old thread, but.... someone posted a link to a great deal on the new Colt series 70 repro.... I swore I saved it, but can't find it , cause now I'm thinking I must have a Colt again! Anyone have the URL/link?

As to the park'd Springfield Loaded, I haven't gotten to the range yet, but I picked mine up yesterday (payed a few $ more than in the mod's link, cause I didn't see this in time!) but it appears to be really nicely done! I am pleased
