definitely stainless.  They hold up tons better than other finishes.  I have 20 year old handguns that look brand new while some of my blued stuff looks 20 years old.

I like the dull stainless with unpolished rounds.. I also like the Black/Stainless like the Eclipse series have.

Parkerized OD Green.... I love it cuz that was the first big pistol I ever shot... Dad got it pre GCA68 ... CMP Surplus, $15 shipped to his Post Office... just had to show ID and sign for it.  He kicks himself to this day for not getting a surplus 1903 Springfield at that time, but they were expensive... $25!

Voted Black for the lack of a "highly polished blue" option.  What can I say, guns are supposed to be blued....   Black phosphating or parkerizing is a good second choice.

I like SS best because it wears better than any others. All my guns are for use and none are safe queens so I like a tough finish. Some of the high tech finishes are nice but I hate blued guns as they rust easy and holsters wear the blueing off fast. Resell value is also much better on a nice looking gun and SS wears least of all.
Many of my friends whose opinion I respect like "black/blued" guns better but I have my own opinion.

I voted chrome, but it has nothing to do with aesthetics.  A good hardchrome job wears better than any other finish, and is more rust-resistant than any other finish.
and I don't go in for that whole "black is easier to conceal" nonsense.

ETA:
I do prefer the chrome matte or brushed however.
