I hear all this talk about the MIM and schwartz safety being a huge detriment to the 1911 design, as evidenced in the Kimber Series II pistols.

I personally have yet to see any problems, but am curious:

Are there any specific how-to's on replacement of these "troublesome" parts?  Any suggestions of what to replace that is NOT a gunsmith undertaking?

The series 2 parts are pretty easy to remove. Nothing special there. The hammer, slide stop, thumb safety, and other mim parts should be simple with Wilson drop in parts. I havent found a reason to replace/remove anything from either of mine yet though.
