The Zebra cakes are good this way - the icing doesn't freeze or even get hard and the inside stays kinda soft. I found these were good this way accidentally after leaving them in a freezing car overnight. I had forgotten how good they were. Any of the greasy-iced stuff that is similar has similar results (Christmas tree cakes, valentines cakes, etc).
