I'm looking to make a flexible cabinet door like would be used in a bred box or roll top.

Any hints / suggestions?

I'm planning on taking some half round, and gluing it to some heavy canvas.

you can do that, but it is also sold in sheet stock ready to cut to size. Check with cabinet supply companies or fine woodworking companies.
